Acacia fibre, also known as gum arabic, is a natural soluble fibre obtained from the sap of acacia trees of the species Acacia senegal, which grow in the dry savannah regions of sub-Saharan Africa – above all in Senegal, Sudan and neighbouring countries. It has a thousand-year history of use in the food industry and traditional cuisine. Today it is among the most thoroughly researched natural sources of soluble fibre in the world.
