Cardamom is also called the "queen of spices". Its green pods are the fruit of wild plants growing in the rainforest. They are used either whole or crushed. Green cardamom has a distinctive aroma and a lemony, floral flavour with a light hint of camphor and eucalyptus.

True green cardamom has a strong, unmistakable aroma and flavour that cannot be replaced by any other spice. Cardamom is traditionally used in sweet Indian desserts, gingerbread and cakes. It is also excellent in fruit compotes, marinades, wines and liqueurs.

The fresh flavour of green cardamom also complements a milder version of curry very well (such as butter chicken). Green cardamom is also used to flavour black tea and coffee.

If you prepare crushed cardamom at home, never use the green skin, only the inside of the pod. Carefully cut it open and pour out the dark seeds. These seeds should then be ground.
