    Asafoetida (devil's dung) is a strong, aromatic spice used in many Persian and Indian dishes. It is one of the most interesting and unforgettable aromas you will encounter if you visit an Indian or Persian restaurant. It is used as a substitute for garlic and onion, and is a main ingredient of curries, pickled vegetables and other spicy dishes. It combines wonderfully with caraway, mustard seeds, curry and ginger.
