Coconut sugar is made from the nectar of coconut palm flowers (in Indonesia and on the island of Bali) by gradually heating it, causing the water to evaporate from it and brown sugar crystals to form. Thus thesugar obtained has a delicate caramel flavour, with the coconut flavour not particularly noticeable in it. In its sweetness, coconut sugar resembles classic granulated sugar, however the glycaemic index of coconut sugar is much lower compared to granulated sugar (35). This is due to the fact that coconut sugar contains inulin, which slows down the absorption of glucose. In addition, it is also a very nutritious sugar. It contains minerals such as zinc, iron, calcium and potassium, as well as polyphenols and short-chain fatty acids. 

Coconut sugar is 100% natural, unrefined, and dissolves very easily. It gives sweetened foods a delicate caramel flavour, which it acquires naturally.
