True Ceylon cinnamon /Cinnamon zeylanicum - verum / is a spice obtained from the inner bark of the Ceylon cinnamon tree. It is grown in Sri Lanka and southern India. It has a sweetish taste, and at one time its price in China was higher than the price of gold. It warms up the body, stimulates blood circulation and thereby also heart activity and breathing. Through its warmth it brings energy into the body, and even the scent of cinnamon alone stimulates brain activity.
It is a spice with a high content of polyphenols - chemical compounds responsible for its characteristic colour. Besides their colouring ability, polyphenols have several health-beneficial effects - they act as an anti-inflammatory, prevent carcinogenic processes and protect the circulatory system, heart and blood vessels. Among all foods, cinnamon ranks sixth for its antioxidant capacity. This means it is effective in fighting dangerous free radicals in the body, which arise mainly as a result of stress, a polluted environment, an unsuitable diet or digestive disorders.
There are 2 main types of cinnamon - Ceylon cinnamon and Chinese cinnamon (cassia), which is more affordable, but in taste and aroma Chinese cinnamon cannot compare with Ceylon cinnamon. It also contains far more of a substance called coumarin.
Cinnamon has a high content of bioactive substances /polyphenols, flavonoids, lauric acid, cinnamic acid/, which improve the cell's use of glucose and slow the release of fast, simple sugars into the bloodstream. Regularly including cinnamon in your diet can be an effective prevention, particularly against colon cancer, but also against carcinogenic processes in general, with the substance cinnamaldehyde playing the main role in this prevention.
Use: For flavouring grain porridges, sweet and fruit dishes. The true aroma of cinnamon is suitable for preparing hot drinks (teas, mulled wine or coffee). In cosmetics it is also used for anti-cellulite and treatment wraps.
