UBE (pronounced: OO-beh) is a purple sweet potato (Dioscorea alata / winged yam) , where it is one of the most popular traditional delicacies. Its characteristic deep purple colour comes from natural antioxidants – anthocyanins – without any artificial colouring. The flavour is mildly sweet and nutty with a hint of vanilla – distinctive and addictive.
