CASSIA CINNAMON

Latin name – Cinnamomum  Cassia (Chinese cinnamon)

Scent – warm, intense, typically cinnamon-like

Method of production – by steam distillation of the leaves

Country of origin – China

THE DIFFERENCE between the essential oil from Ceylon cinnamon (Cinnamomum Zeylanicum) and Chinese CASSIA cinnamon (Cinnamomum Cassia):

Chinese CASSIA cinnamon – stronger, more intense, distinctly cinnamon-like scent

Ceylon cinnamon – more closely resembles the scent of clove and is less intense
