Quinoa comes from South America, where it was grown at altitudes of up to 4000 metres. For ancient South American civilisations, it was the second most important crop after potatoes. The Incas called it the mother of all grains. Because of its special properties, America's NASA considers it one of the basic foods for crewed space flights.

Preparation:

Cook quinoa in a similar way to rice (2 cups of water to 1 cup of grain) for 14 - 18 minutes. Once cooked, quinoa has a pleasant, light, slightly nutty flavour. Use any spices or vegetables to season the grain. Mixing it with fruit, honey, nuts and milk creates a light, vitamin-rich and energy-dense breakfast.
